Bunzlau Castle is known for their high quality ceramics in blue and white, mix and match! Suitable for oven, microwave and dishwasher. Tarragon cashew nut salad
Between all that sweet, it’s nice to have something savory too. This salad is so easy to make and a nice light snack. Serve in beautiful glasses on a saucer and it looks super festive.
This is what you need:
- 75 grams of rocket
- 120 grams marinated tomatoes (semi-sun-dried)
- 80 grams Grana Padano flakes (or grate a piece of Grana Padano yourself)
- 100 grams of unsalted cashew nuts
- 4 tbsp good olive oil
- 2 tsp dried tarragon
This is how you work
Mix the olive oil with the tarragon in a bowl and let it stand for a while so that the tarragon can properly absorb into the oil. In the meantime, cut the marinated tomatoes lengthwise.
Mix the rocket, tomatoes and cashew nuts and tarragon oil together in a large bowl.
Divide the salad among glasses or bowls and finish with the Grana Padano flakes.
